From the earliest days of wine making in Australia, there has been a tradition of fortifying wine with distilled grape spirit to produce a typically richer, sweeter, more robust and firm textured wine with higher alcohol. This type of wine with its high alcohol is stable and less likely to spoil; they travel well and can be enjoyed commonly after meals, as a dessert wine or with cheese. Over many years they become richer and more complex either when bottled as a vintage style or aged in oak.
The concentrated flavours of our low yielding Cabernet Sauvignon are captured in the fortifying process with the addition of spirit at a beaume of approximately 9. The wine is aged in old 300l barrels, left on the lees for some months and racked and returned to the barrels. It is bottled as a vintage style at one year.
We produce this wine only in exceptional years and being based on Cabernet Sauvignon grapes we expect it to be bottle aged for many years before drinking. However, even when young the dark ruby colours and fresh cabernet fruit flavours can be appreciated.
